Ella Valley Wine is a nouveau wine from 2016. It is a compilation of 90% Syrah and 10% Roussanne from the Janaba vineyard. The Roussanne grapes were harvested on the second week of August, were fermented while using the wild yeast that were on the grapes, without adding yeast culture. The wine was separated from the skins directly after the fermantation ended, and was transferred to steel tanks. This wine is the restaurants “house wine”. In 2017 about half of the wine (1500 l.) was bottled, the result is a young, crisp, fruity and fresh wine, with a medium body are is ready to drink now.
